Today is a stock day... you may think that I mean a day for taking stock... Close! It's a day for making stock. I have two carcasses, a turkey one and a duck one... So I feel obliged to reduce them to tasty liquid, and anyway it makes the house smell warm and welcoming. They are presently in the oven roasting to bring out the flavour, then I will drown them and start the long slow boil. There will be tasty soup here this week.
