Caramel nuts

This is for tephramancy, but others may be interested too.

200g unsalted mixed nuts
100g soft brown sugar
50g butter
2 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cardamom
1 tsp ground coriander
1 Tsp water

Put the sugar and butter in a non-stick frying pan, add the spices and heat gently till butter is melted. Mix well, then add the nuts, and gently raise the heat till the caramel starts to bubble. Remove from the heat and add the water, which will bubble somewhat violently. Continue stirring the mixture while it cools, ensuring all the nuts are coated with caramel. When it starts to solidify, spread on a sheet of foil on a flat tray to cool, separating the nuts as much a possible.
